🍷 A wine made using the ancestral method, a fresh sparkling wine with very fine bubbles. No added yeasts, spontaneous fermentations.

It is bottled before fermentation is completely finished when the natural sugars and yeast residues release the CO2 that produces the fine bubbles.

📍 Michael Cooper makes wines in his own vineyards, located at 700m in Campos de Borja. His winery, Vinos del viento, is named after the strong 50km winds in the Ebro Valley where they are located. Originally from California, he has been living in Spain for over 25 years, where he shares with his partner the project of making wine in their own winery, with their own rules, following the philosophy of respect and artisanal production.
