10,000 bunches meticulously selected prior to harvest rest in the drying room for 4 or 9 months, depending on the year, and are then pressed to obtain an exclusive nectar from Ribeiro.
An ancestral winemaking method dating back to the monks who made wine in the monasteries and has been preserved from generation to generation.

📍Jorge and Dori are a young couple of engineers who decided to turn their lives around to follow their passion, viticulture. They both dedicate themselves to tending 2 hectares of their own on the slopes of the Miño River, spread across two estates: Pena Bicada and O Souto, following the philosophy of biodynamic agriculture.
The winery was established in 2016, in the parish of Astariz, Ribeiro, in Ourense. They work with native varieties planted in weathered granite rock soil (xabre).
