Second, the ancestral winemaking process of the area and, lastly, its aging.

Winemaking known as “integral elaboration,” an ancient method that almost no one dares to undertake: alcoholic fermentation takes place in French oak barrels and lasts 12 months, during which malolactic fermentation and aging on lees with periodic batonages occur simultaneously.

📍Rafael López García is a modern vigneron, viticulturist, and engineer who has dared to apply fermentation processes that last several months with his 6to elemento project.

His vineyards are in Venta del Moro, in the Mediterranean mountains of Valencia, at 900 meters, which imparts significant power due to the altitude, along with the influence of the sea.

He has revived almost forgotten varieties such as Bobal, Royal, Tardana.
