🍷Destemmed grapes and 8 hours of cold maceration with skins.
Must drained by gravity, without pressure (free-run juice). Fermentation without skins in used French oak barrels and subsequent aging for 9 months with periodic batonnage. Bottled in September 2023.

📍The sisters María and Joana Abete maintain the family-owned vineyards and winery that their father Máximo Abete started over 40 years ago in the Sierra de Guerinda, Navarra. They understand that the only way to make quality wines is by caring for and respecting the land, recovering local varieties and not intervening in the winery process, allowing the wines to ferment, clarify, and stabilize through their own natural process.
